1 cup liquid egg whites
1½ cups low-fat cottage cheese
4 precooked turkey sausage patties, diced
1 cup fresh spinach, finely chopped
½ cup red bell pepper, diced
¼ cup green onions, sliced
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon smoked paprika
¼ teaspoon freshly ground black pepper
¼ teaspoon salt (optional)
Olive oil or avocado oil cooking spray
Hot sauce (optional, for serving or before baking)

INSTRUCTIONS:
Preheat the oven to 375°F. Lightly coat a 12-cup muffin pan or reusable silicone muffin cups with olive oil or avocado oil cooking spray.
Blend the eggs, egg whites, cottage cheese, garlic powder, onion powder, smoked paprika, black pepper, and optional salt in a high-speed blender or with an immersion blender for 20–30 seconds, until smooth and creamy.
Fold the diced turkey sausage, spinach, bell pepper, and green onions into the egg mixture until evenly combined.
Divide the mixture evenly among the 12 muffin cups, filling each about ¾ full.
Optional: Add a small dash of your favorite hot sauce to the top of each muffin before baking.
Bake for 22–25 minutes, or until the muffins are puffed, lightly golden, and just set in the center.
Cool for 5 minutes before removing the muffins from the pan or silicone muffin cups.
